
Our Story
Western Massachusetts, tucked into the hills of the pioneer valley on the border of Vermont, is the home of The Potato Caboose!
In 2021, stemming from our love of music and attending music festivals, and a drive to get out from behind our computers, we developed a music-themed baked potato menu. Over the winter, we completely gutted and rebuilt an old VFW food trailer turning it into The Potato Caboose. We recruited our artist friend John Gatto to custom design our logo and hand paint the Caboose. 2025 will be our fourth season bringing loaded baked potatoes to music festivals in Massachusetts, Vermont, New Hampshire, Rhode Island, and New York state.
We love the music, the food, and especially the people and working with our family and friends! We want to make sure you’re well fed and can dance the night away. We’ll see you on the dance floor!

Why ” The Potato Caboose” ?
Some people ask us why and how we decided to name our food trailer The Potato Caboose. They may know of the Grateful Dead song The New Potato Caboose and think we named our food trailer after that one song. While many of our potato names honor the Grateful Dead, The Potato Caboose harkens us to reminisce about all of the music that was born from artists singing about living and working on the road, and the ideas of freedom and transition and recovery that can come with travel. The Potato Caboose name is in reference to the constant change and motion of our food trailer – moving from festival to festival – and then eventually home again. From the Doobie Brother’s “Long Train Runnin’” to Gladys Knight & The Pips “Midnight Train to Georgia” and “Midnight Train to Memphis” by Chris Stapleton, and Bob Dylan’s “Freight Train Blues” and yes, also to “Mystery Train” and “Casey Jones” by the Grateful Dead (to name just a few)- there are thousands of references to trains and to the constant movement of life in so much of the music we know and love. This is our way of honoring that music, and maybe bringing a bit of that feeling of freedom and hope with us to the next stop.
The yearn for change; that was, and still is, the motivation behind our development of The Potato Caboose. And that is what these songs about trains and travel make us think about. We keep coming up with more and more baked potato topping ideas, inspired by the music we listen to everyday. So look for us at the next stop – the next music festival in town or a town near by. We’ll be working that Caboose – serving up some fresh baked potatoes while there!
